Eggo Waffle Bar - Our Favorite Breakfast for Dinner

I've been really good recently about eating a delicious filling breakfast over the past few weeks, and have also made sure to feed Tall Dad and Rhys the same! Our go-tos have been Eggo Waffles with peanut butter, eggs, and lots of delicious fruit.

Well last night, I just didn't feel like cooking dinner. I was tired, my 8 month pregnant belly ached, and Tall Dad had just returned from having a root canal. Slaving over a stove was NOT something I was looking forward to, so I decided to add a bit of pizzaz by proclaiming that we were going to have Breakfast for Dinner - in the form of an Eggo Waffle Bar!

I started popping some waffles inside of our toaster, washed off some fruit, and got out our maple syrup, peanut butter, mini chocolate chips, and jelly. Making Breakfast for Dinner honestly took me 5 minutes of my time.
Imagine that - having a happy, full and well fed family, for just 5 minutes?! 

It's true. I felt like a rockstar mom. 

What made it even better was that my mom, otherwise known as Grandma, showed up at dinnertime. 

My mom is a wiz in the kitchen. She can cook up anything. My meals always pale in comparison, and I'm often embarrassed to have her over for dinner because I know my food is mediocre compared to hers.

But you know what? 

She said last night's spread of waffles, fruit and sausages was beyond delicious - and beautiful.

I've never heard anyone call my meals "beautiful!"
I think what helped bring my waffle bar up a notch was taking the berries out of their containers and putting them in martini glasses. They were the perfect size, and became table decorations.

Plus, since I'm pregnant, I'm not really drinking martinis right now, so it was nice to see my pretty glasses put to use!

We had a blast decorating our Eggo waffles. Tall Dad opted for just butter and syrup, whereas Rhys gobbled his up smothered in peanut butter and fruit. 

I ate a little bit of everything, and savored each bite. My waffles tasted even better because of how easy they were to prepare!
Sitting around the dinner table with my family is such a nice activity, and it really warmed my heart to know that I was able to make not only a toddler friendly meal, but also something Tall Dad could eat with his novocained mouth. 
Our fridge is always stocked with waffles - whether they be blueberry, whole wheat, or even the super sweet chocolatey chip! Eggo makes a huge assortment, and I just pick up a couple of boxes each time I visit Walmart. 
After the success of our Breakfast for Dinner Waffle Bar, I am most likely going to create it again later this month for brunch with my friends. I love how people can get creative with different toppings and make their own creations. It would even be super fun for a baby or bridal shower!

  1. Ooo...this sounds like an awesome idea for dinner! I love using the glassware to present the fresh fruit. For me, I love chopped nuts, so I would include some toasted, chopped pecans on my waffle. Thanks for sharing! #client
